Delicious chocolate & goji berry bars!
On Sunday 12th March we held our first yoga retreat and I am proud to say it was a great success! The sell-out day consisted of two yoga sessions, a presentation discussing "6 simple steps to improve overall health", as well as an offering of healthy snacks for the beautiful guests. The healthy snack which the guests raved about the most had to be the chocolate and goji berry bar. This raw, gluten free, delicious bar couldn't be easier to make. I have also made these bars with half hazelnuts and almonds, which were just as lovely. Cashews or macadamia nuts would also be a great option, so have a play and let us know what you think!
INGREDIENTS
160g raw unsalted almonds
3 tbsp coconut oil
20 dried pitted dates (we used slightly less. We suggest mixing 11 and then add more if you need)
3 tbsp goji berries
3 tbsp raw cacao powder
INSTRUCTIONS
Place all ingredients into a food processor, blitz until the ingredients form a paste.
Tip the mixture into a lined tray, press down using the back of a wooden spoon until the mixture is smooth and level. Chill in the fridge until firm. Once the mixture if firm, cut into bars as per the photo.
The bars will keep well in an air tight container in the fridge for up to a week, or freeze them up to a month.
